The Instant Pot Cookbook Every Mom Should Have

Do you wish you had a fabulous Instant Pot® cookbook? As a work-at-home, homeschooling mom of two, I always look for quick recipes. This article is about the ONE Instant Pot Cookbook every mom should have.

I’ll never forget the day I got my Instant Pot. While I was excited to have this new kitchen tool everyone was talking about, I was intimidated by its size.

After letting the Instant Pot sit untouched for over a week, I finally decided to dive in.

My first recipe was hard-cooked eggs.

I was delighted by the results – and that this appliance yielded the best hard-cooked eggs EVER!

Over the years, I’ve tried many recipes, blogs, and cookbooks. I’ve made some great dishes and some real flops.

But I recently stumbled upon the BEST Instant Pot cookbook ever.

Before I get into that, though, I need to share a bit of a backstory.

I love food, and 2020 showed me how much I love food. I gained over 10 lbs that year, adding that to the 15 lbs of weight, I never shed after having my kids, and let me say; I’m a little squishy.

While I try hard to ignore weight and focus on health, I admit I haven’t embraced healthy habits.

I’ve been exercising daily, but I’ve been eating garbage. I’m a sucker for potato chips, chocolate, ice cream, and baked goods.

But recently, I had an epiphany:

“To lose weight and keep it off, follow the 80% nutrition, 20% exercise rule.” I only needed to hear it a zillion times before it could click in.

Oops.

I’m weight training, doing yoga, and going on 30-—to 60-minute hikes daily, yet I’ve gained weight over the past year. It’s time to follow this 80% diet and 20% exercise rule!

But here’s the thing. I’ve been led to believe that cooking healthy food takes a lot of time (unless you’re eating salads daily, of course… which I have no intention of doing).

I need healthy food, but it needs to be quick.

The Instant Pot Cookbook Everyone Needs

This led me to the perfect quick-recipe, healthy foods cookbook.

I performed a quick online search and stumbled across the Instant Loss website created by Brittany Williams.

Oh. My. Goodness.

This was precisely what I needed!

Brittany’s recipes are all healthy recipes made in the Instant Pot!

I borrowed her Instant Loss Cookbook from the library. After making 8 of the 125 recipes, I decided to add this book to my cookbook collection!

Brittany’s recipes are AMAZING and so delicious!

Furthermore, my husband and kids love these recipes too!

How could I go wrong with a cookbook that has quick, healthy, AND delicious recipes in it?!

Instant Pot Recipes I Love

So far, I have made the following Instant Pot recipes:

  • Blueberry Breakfast Cake (full of oatmeal and packed with flavor)
  • Simple Breakfast Frittata
  • Egg Roll Bowl (my family LOVED this one)
  • Skinny Chicken Pot Pie
  • Shredded Beef Tacos
  • Skinny Enchiladas (move over taco Tuesdays – there’s a new star in town)
  • Orange Chicken Bowl (pictured above – so yummy)

I adore this cookbook. The introduction starts with Brittany sharing her inspiring weight loss journey. Brittany lost 105 lbs in a little over eight months, mostly through dietary changes (the recipes she’s shared in this cookbook). There are no radical dietary supplements or extreme exercise programs—she adopted the J.E.R.F. (just eat real food) principle. Plus, Brittany is completely relatable (hello, fellow homeschooling mama)!

Instant Loss Cookbook Lasso Brag

I plan on trying all the recipes in her cookbook this year. At the end of the year, I’ll get her second book (Instant Loss: Eat Real, Lose Weight) and third book (Instant Loss on a Budget). It will be my “reward” for sticking to her recipes and recommendations.

I can’t wait to see what comes of this year.

So there you have it… if you buy ANY Instant Pot cookbook, consider purchasing the Instant Loss Cookbook. I promise you won’t be disappointed!
